While buying organic chicken may increase your grocery bill, the health benefits are definitely well worth it.  Not only is pasture-raised chicken meat leaner and more flavorful, it is also higher in vitamins, minerals and omega 3 fatty acids than its conventional counterpart.

So here is a perfect busy-week-night meal, that features some tender and juicy chunks of organic chicken meat.  it’s so quick and easy to make, and my husband and daughter devour it every time.
