Savory Tuscan Basil Chicken Pasta

Commercially-raised poultry often contains hormones, antibiotics, pesticides and other contaminates, all of which can be a potential health hazard.

While buying organic chicken may increase your grocery bill, the health benefits are definitely well worth it.  Not only is pasture-raised chicken meat leaner and more flavorful, it is also higher in vitamins, minerals and omega 3 fatty acids than its conventional counterpart.

So here is a perfect busy-week-night meal, that features some tender and juicy chunks of organic chicken meat.  It’s so quick and easy to make, my husband and kids devour it every time.

Hope you enjoy it too!

Instructions
  1. Cook optional pasta or rice according to package instructions.
  2. In a large skillet, add oil and turn to medium heat. Add the onion, celery and carrot, and salute until they begin to soften.
  3. Add chicken strips, and cook until no longer pink, (about 2-3 minutes each side).
  4. Stir in diced tomatoes, basil and salt & pepper. Bring to a boil and then reduce heat to medium low, and simmer for about 10 minutes, to let the flavors come together. Stir in the optional cream at this point if using.
  5. Serve over optional prepared pasta or rice, sprinkle optional cheese on top, and enjoy!
