Squash Medley

I love butternut squash so much. It’s a healthy, versatile vegetable that has fantastic shelf life. When I was a kid, my parents would often cook up a butternut squash with some potatoes and carrots, gave it a little mash, seasoned it up a bit, and yummo!  It hit the spot every time.

So I bring to you, a favorite childhood recipe that is great to make when you want something simple, satisfying, and very easy on the digestive tract.  

My family enjoys this as a main dish, a side dish, and for breakfast, lunch or dinner!

Instructions
  1. Peel and cube squash into small chunks, and place in a large pot. Add the potato and carrot chunks (using more or less to get an even distribution of these three ingredients).
  2. Barely cover vegetables with water, and add bay leaf, a sprinkling of salt & pepper, and an optional dash of Bragg Sprinkle.
  3. Bring to a boil, then immediately turn down to a simmer, cover and steam until vegetable are fork tender, (about 20-30 minutes).
  4. Drain water (but save 1 cup of water and set aside), and remove bay leaf.
  5. With a potato masher, mash until desired consistency, adding any reserved water if it's too dry. Now add butter, 2 teaspoons salt, 1/2 teaspoon pepper, dish up and serve! (Adding more seasoning to individual portions if needed).
  6. Enjoy!
