Vegetable Rice Soup
I love soups so much, but I don’t make them very much in the summer, for obvious reasons. But when the clouds rolled in today, and the rain started to fall, I knew that this extremely simple and wholesome soup was just the fix. It’s a simple and nutritious one-pot-meal, that will surely be enjoyed by all.

  1. Add a little coconut or olive oil to a large stock pot, and turn to medium heat.
  2. Add onion and celery and saute for 3-5 minutes, or until slightly softened.
  3. Add all other ingredients except for the spinach, and bring to a boil. Reduce heat , cover, and simmer for about 45 minutes or until rice is soft.
  4. Add chopped spinach, and simmer another 5 minutes, adding more broth as needed.
  5. Serve warm and enjoy!
